Maybe as the semester is drawing to a close you are running short of cash and wondering what to eat. Here is a recipe that is so quick to make, it’s tasty and healthy too!

Chick Pea Curry
# 1 can of Chick Peas
# 1 finely sliced Onion
# 1 can of chopped Tomatoes
# 1 chopped Green chili
# 4 chopped Garlic cloves
# 1 inch chopped ginger
# 2-3 Bay leaves
# 1 tsp. Red Chili powder
# 1/2 tsp. Turmeric powder
# 1 tsp. Coriander powder
# 1 tsp. Garam Masala powder
# Olive oil and knob of butter
# Fresh Coriander leaves for garnishing
- Finely slice the onion and fry until golden brown
- Add the ginger, garlic and green chili.
- Make a paste by adding spices and tomato puree and splash of water (don’t add garam masala yet)
- When oil separates add tin of tomatoes and bring to boil
- Add cooked chick peas
- simmer until heated through then 2-3 minutes before serving add garam masala
- Add little water to make gravy if need. Bring to the boil and serve
- Finally garnish with chopped green coriander leaves and serve hot
A good way to serve this would be with some lettuce and yoghurt in a wrap folded into a cone shape and filled.
